Ingredients:

  • 500g kangaroo mince
  • 1 can (400g) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat a little oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the kangaroo mince. Cook until browned, breaking it apart with a spoon.
  4. Stir in the diced tomatoes, tomato paste, soy sauce, brown sugar, oregano, smoked paprika, salt, and pepper. Mix well.
  5. Reduce the heat and let the sauce simmer for about 15-20 minutes, allowing the flavors to meld together.
  6. Serve the kangaroo mince in sweet and salty tomato sauce over a bed of rice. Garnish with fresh parsley.
