Ingredients:

  • 4 medium zucchini
  • 1 ripe avocado
  • 1 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon pine nuts (optional for garnish)

Instructions:

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles. Set aside.
