Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions:

  1. Turn the Instant Pot to sauté mode and add olive oil.
  2. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken thighs to the pot, followed by the chicken broth, dried basil, dried oregano, and red pepper flakes if using. Season with salt and pepper.
  5. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  6. Once cooking is complete, allow for a natural release of pressure for 5 minutes, then do a quick release for any remaining pressure.
  7. Remove the chicken and shred it with two forks. Return the shredded chicken to the pot.
  8. Stir in the heavy cream, chopped spinach, and sun-dried tomatoes. Let it simmer for a few minutes until heated through.
  9. Serve hot, garnished with grated Parmesan cheese if desired.
