Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 3 tablespoons key lime balsamic vinegar
  • 2 tablespoons harissa olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. In a bowl, combine the key lime balsamic vinegar, harissa olive oil, minced garlic, honey, smoked paprika, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Remove the chicken from the marinade and place it skin-side up on a baking sheet lined with parchment paper.
  5. Roast the chicken in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  6. In the last 10 minutes of cooking, drizzle the chicken with additional balsamic glaze for extra flavor.
  7. Once cooked, let the chicken rest for 5 minutes before serving.
  8. Garnish with fresh cilantro and serve with lime wedges on the side.
