Ingredients:

  • 1 lb Kielbasa sausage, sliced
  • 3 medium potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes, sliced carrots, and celery. Drizzle with olive oil and sprinkle with garlic powder, rosemary, salt, and pepper. Toss to coat evenly.
  3. Add the sliced Kielbasa to the vegetables and mix well.
  4. Transfer the mixture to a baking dish and pour the chicken broth over the top.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and the sausage is browned.
  7. Serve warm, garnished with additional rosemary if desired.
