Ingredients:

  • 1 lb kielbasa sausage, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 cup carrots, sliced
  • 4 cups chicken or vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  2. Add the sliced kielbasa to the pot and cook until browned, about 5-7 minutes.
  3. Stir in the diced potatoes, chopped celery, and sliced carrots, cooking for another 5 minutes.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Add the dried thyme, smoked paprika, salt, and pepper. Reduce heat to a simmer and cover the pot.
