Ingredients:

  • 2 lbs chicken wings
  • 1/4 cup gochujang (Korean chili paste)
  • 2 tbsp honey
  • 2 tbsp soy sauce (gluten-free if needed)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. In a large bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic powder, and ginger powder.
  2. Add chicken wings to the marinade, mixing well to coat. Cover and refrigerate for at least 1 hour (or overnight for best flavor).
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Arrange the marinated chicken wings in a single layer on the baking sheet.
  5. Bake for 40-45 minutes, turning halfway through, until wings are crispy and cooked through.
  6. While the wings are baking, prepare the mango salsa by mixing diced mango, red bell pepper, red onion, lime juice, and cilantro in a bowl. Season with salt and pepper to taste.
  7. Once the wings are done, remove from the oven and let them rest for a few minutes before serving.
  8. Serve the wings topped with sesame seeds and alongside the mango salsa.
