Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup bulgogi sauce
  • 2 cups green cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/4 cup green onions, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (or to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. In a bowl, combine the chicken thighs and bulgogi sauce. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. While the chicken is marinating, prepare the cole slaw. In a large bowl, mix together the shredded cabbage, grated carrots, and sliced green onions.
  3. In a separate small bowl, whisk together the mayonnaise, rice vinegar, sriracha, sesame oil, salt, and pepper. Pour this dressing over the cabbage mixture and toss until well combined. Adjust seasoning if necessary.
  4. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  5. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  6. Serve the grilled chicken over a bed of spicy cole slaw and garnish with sesame seeds.
