Ingredients:

  • 8 oz pasta (gluten-free if desired)
  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup vegetable broth
  • 1 tablespoon lemon juice
  • 1/4 cup pine nuts, toasted
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breasts with salt and pepper.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest before slicing.
  4. In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Add the vegetable broth and lemon juice to the skillet, bringing it to a simmer.
  6. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well combined. Adjust seasoning with salt and pepper as needed.
  8. Serve warm, topped with toasted pine nuts and garnished with fresh parsley if desired.
