Ingredients:

  • 8 oz pasta (fettuccine or linguine)
  • 4 slices of bacon, chopped
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
  3. In the same skillet, add the asparagus and mushrooms. Sauté for 4-5 minutes until tender. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the cooked pasta to the skillet, along with the lemon juice, lemon zest, and crispy bacon. Toss everything together until well combined.
  5. Season with salt and pepper to taste, then sprinkle with grated Parmesan cheese and toss again.
  6. Serve hot, garnished with fresh parsley.
