Ingredients:

  • 8 oz spaghetti or fettuccine
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup heavy cream
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through. Remove from the skillet and let rest for a few minutes before slicing.
  4. In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.
  5. Add lemon zest, lemon juice, and heavy cream to the skillet. Stir to combine and let it simmer for 2-3 minutes until slightly thickened.
  6. Add the cooked pasta and sliced chicken to the skillet. Toss everything together to coat with the sauce.
  7. Stir in chopped basil and season with additional salt and pepper to taste.
  8. Serve with grated Parmesan cheese on top.
