Ingredients:

  • 8 oz spaghetti or fettuccine
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest for a few minutes before slicing.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook until they begin to soften.
  5. Stir in the lemon juice and zest, then add the cooked pasta and sliced chicken to the skillet. Toss everything together until well combined.
  6. Remove from heat and stir in the chopped basil. Adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with freshly grated Parmesan cheese.
