Ingredients:

  • 8 ounces of spaghetti or fettuccine
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 lemon, zested and juiced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until cooked through. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  4. Stir in the lemon zest and juice, then add the cooked pasta and sliced chicken back into the skillet. Toss everything together, adding the fresh basil and adjusting seasoning with salt and pepper.
  5. Serve warm, topped with grated Parmesan cheese.
