Ingredients:

  • 8 oz pasta (spaghetti or penne)
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 lemon, zested and juiced
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
  3. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until fully cooked. Remove the chicken from the skillet and let it rest before slicing.
  4. In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Add the cooked pasta to the skillet along with the lemon zest, lemon juice, and chopped basil. Toss to combine.
  6. Slice the chicken and place it on top of the pasta. If desired, sprinkle with red pepper flakes and Parmesan cheese before serving.
