Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup fresh basil leaves, chopped
  • 8 ounces spaghetti or linguine
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions:

  1. In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped basil, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, cook the marinated chicken breasts for about 6-7 minutes per side, or until cooked through and golden brown. Remove from the skillet and let it rest before slicing.
  4. In the same skillet, add a bit more olive oil if needed, and toss in the cooked pasta. Mix well to coat, adding more lemon juice and fresh basil as desired.
  5. Serve the pasta topped with sliced chicken and sprinkle with Parmesan cheese if using.
