Ingredients:

  • 8 oz linguine or spaghetti
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook until they begin to soften, about 2-3 minutes.
  5. Add the cooked pasta to the skillet, along with the lemon zest, lemon juice, and chopped basil. Toss to combine and heat through.
  6. Slice the chicken and serve on top of the pasta. Sprinkle with grated Parmesan cheese and additional basil if desired.
