Ingredients:

  • 8 oz fettuccine pasta
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and let rest before slicing.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream, lemon juice, and lemon zest. Stir to combine and let simmer for 2-3 minutes.
  6. Add the grated Parmesan cheese and stir until melted and the sauce is creamy. Season with salt, pepper, and red pepper flakes if using.
  7. Toss the cooked pasta in the lemon cream sauce until well coated.
  8. Serve the pasta topped with sliced chicken and chopped fresh basil.
