Ingredients:

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 lemon, zested and juiced
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
