Ingredients:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until cooked through. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
  4. Stir in the Parmesan cheese, lemon zest, and lemon juice. Mix well until the cheese is melted and the sauce is creamy.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in the chopped basil and adjust seasoning with salt, pepper, and red pepper flakes if desired.
  6. Slice the chicken and serve it on top of the pasta.
