Ingredients:

  • 8 oz fettuccine pasta
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side or until fully cooked. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the lemon juice, lemon zest, and chicken broth to the skillet, scraping up any bits from the bottom. Bring to a simmer and let cook for 2-3 minutes.
  5. Stir in the heavy cream and chopped basil, allowing the sauce to thicken slightly. Season with additional salt and pepper to taste.
  6. Add the cooked fettuccine to the skillet and toss to combine, ensuring the pasta is well coated in the sauce.
  7. Slice the chicken and serve it on top of the pasta, garnished with extra basil and grated Parmesan cheese.
