Ingredients:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until cooked through. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add chicken broth, lemon zest, and lemon juice. Bring to a simmer.
  4. Stir in heavy cream and cook for another 2-3 minutes until slightly thickened. Add chopped basil and mix well.
  5. Toss the cooked pasta with the sauce, ensuring it's evenly coated. Slice the chicken and place it on top of the pasta.
  6. Serve with grated Parmesan cheese if desired.
