Ingredients:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and slice into strips.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Stir in lemon juice and zest.
  5. Lower the heat and add the heavy cream and Parmesan cheese, stirring until combined and heated through.
  6. Add the cooked pasta and sliced chicken to the skillet, tossing to coat in the sauce. Stir in fresh basil.
  7. Serve immediately, garnished with additional basil and Parmesan if desired.
