Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup gluten-free flour (or regular flour if not gluten-free)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 cup chicken broth
  • 2 tablespoons capers, rinsed
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Lemon slices for garnish

Instructions:

  1. Pound the chicken breasts to an even thickness for uniform cooking. Season both sides with salt and pepper.
  2. Dredge the chicken in gluten-free flour, shaking off any excess.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the lemon juice, chicken broth, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet and cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Stir in the chopped basil, and adjust seasoning with more salt and pepper if needed.
  7. Serve the chicken garnished with lemon slices and additional basil if desired.
