Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed and drained
  • 1/4 cup fresh basil leaves, chopped
  • Lemon slices for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the butter and the remaining olive oil. Once melted, pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  4. Add the capers and bring the mixture to a simmer. Cook for about 2-3 minutes until slightly reduced.
  5. Return the chicken to the skillet, spooning the sauce over the top. Sprinkle with chopped basil and cook for another minute to heat through.
  6. Serve the chicken garnished with lemon slices and additional basil if desired.
