Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1 cup chicken broth
  • 2 tablespoons capers, rinsed
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon unsalted butter

Instructions:

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Dredge the chicken in flour, shaking off excess.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 4-5 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add lemon juice, chicken broth, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet and simmer for an additional 2-3 minutes until heated through.
  6. Stir in chopped basil and butter until melted and well combined.
  7. Serve the chicken topped with the sauce and additional basil if desired.
