Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon capers, rinsed and drained
  • 1/4 cup fresh basil, chopped
  • Lemon slices for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Dredge each chicken breast in flour, shaking off excess.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  4. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken and set aside.
  5. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any brown bits from the bottom of the pan.
  6. Return the chicken to the skillet and simmer for an additional 5 minutes, allowing the flavors to meld.
  7. Stir in the fresh basil and remaining tablespoon of butter until melted.
  8. Serve the chicken garnished with lemon slices and additional basil if desired.
