Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup fresh basil leaves, chopped
  • Lemon slices for garnish

Instructions:

  1. Pound the chicken breasts to an even thickness and season with salt and pepper on both sides.
  2. Dredge the chicken in flour, shaking off any excess.
  3. In a large skillet, heat the olive oil and butter over medium heat until hot.
  4. Add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Return the chicken to the skillet and simmer for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken.
  7. Stir in the chopped basil just before serving.
  8. Serve the chicken topped with the sauce and garnish with lemon slices.
