Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup fresh basil leaves, chopped
  • Lemon slices for garnish

Instructions:

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Dredge each chicken breast in flour, shaking off the excess.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  5. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Reduce heat and stir in the remaining butter and chopped basil until melted and combined.
  7. Return the chicken to the skillet, coating it in the sauce. Cook for an additional 2 minutes.
  8. Serve the chicken garnished with lemon slices and additional basil if desired.
