Ingredients:

  • 8 oz spaghetti or linguine
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions:

  1. 1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. 2. While the pasta cooks, heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and half of the lemon zest.
  3. 3. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest for a few minutes before slicing.
  4. 4. In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. 5. Add the cooked pasta to the skillet, along with the lemon juice, remaining lemon zest, chopped basil, and red pepper flakes (if using). Toss to combine and heat through.
  6. 6. Remove from heat and stir in the grated Parmesan cheese until well combined. Adjust seasoning with salt and pepper as needed.
