Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil for frying

Instructions:

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In a large bowl, combine the grated zucchini, flour, eggs, Parmesan cheese, baking powder, dill, lemon zest, lemon juice, and black pepper. Mix until well combined.
  4. Heat olive oil in a large skillet over medium heat. Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly to form fritters.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  6. Serve warm, garnished with extra dill or a squeeze of lemon if desired.
