Ingredients:

  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or fettuccine
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Juice and zest of 1 lemon
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Parmesan cheese for serving

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breasts with salt and pepper.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through. Remove from the skillet and let rest before slicing.
  4. In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Add the red pepper flakes (if using), lemon juice, lemon zest, and chicken broth to the skillet. Bring to a simmer and let cook for 2-3 minutes.
  6. Add the cooked pasta to the skillet, tossing to coat in the lemon-garlic sauce. Slice the chicken and place it on top of the pasta.
  7. Garnish with chopped parsley and serve with grated Parmesan cheese.
