Ingredients:

  • 1 lb diced chicken breast
  • 2 cups fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Fresh parsley for garnish

Instructions:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast to the skillet, season with salt, pepper, and oregano. Cook for about 5-7 minutes or until the chicken is browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and the trimmed green beans. Sauté for about 4-5 minutes until they are bright green and tender-crisp.
  5. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  6. Return the cooked chicken to the skillet, add the lemon zest and juice, and toss everything together. Cook for another 2 minutes to heat through.
  7. Serve warm, garnished with fresh parsley.
