Ingredients:

  • 200g pasta (spaghetti or linguine)
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 lemon, juiced and zested
  • 1 lime, juiced
  • 1 tbsp rose harissa
  • 1 ripe avocado, diced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Panko breadcrumbs, for topping
  • Fresh parsley, chopped, for garnish

Instructions:

  1. 1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. 2. In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
  4. 4. Add the rose harissa, lemon juice, lime juice, and lemon zest to the skillet. Mix well and let it simmer for 2-3 minutes.
  5. 5. Add the cooked pasta to the skillet, tossing it in the sauce. If the pasta seems dry, add some reserved pasta water until you reach the desired consistency.
  6. 6. Gently fold in the diced avocado. Season with salt and pepper to taste.
  7. 7. Serve the pasta warm, garnished with fresh basil, chopped parsley, and a sprinkle of panko breadcrumbs for added crunch.
