Ingredients:

  • 8 oz spaghetti or linguine
  • 2 salmon fillets (about 6 oz each)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. While the pasta is cooking, season the salmon fillets with salt and pepper.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the salmon fillets, skin side down, and cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Add the lemon juice, lemon zest, and red pepper flakes (if using) to the skillet. Stir to combine.
  6. Add the drained pasta to the skillet, tossing to coat in the lemon-garlic sauce. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Flake the cooked salmon and gently fold it into the pasta. Adjust seasoning with salt and pepper.
  8. Serve the pasta warm, garnished with fresh parsley and Parmesan cheese if desired.
