Ingredients:

  • 200g pasta (spaghetti or fettuccine)
  • 2 ripe avocados
  • 2 tablespoons rose harissa
  • 1 lemon (zest and juice)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Panko breadcrumbs for topping
  • 1 tablespoon sesame oil
  • Chili oil (optional, for extra heat)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water and drain the rest.
  2. In a food processor, combine the avocados, rose harissa, lemon juice, garlic, olive oil, sesame oil, salt, and pepper. Blend until smooth. If the sauce is too thick, add a bit of the reserved pasta water to achieve the desired consistency.
  3. In a large mixing bowl, combine the cooked pasta with the avocado sauce, tossing gently to coat.
  4. Serve the pasta in bowls, garnished with lemon zest, fresh basil leaves, a sprinkle of panko breadcrumbs for crunch, and a drizzle of chili oil if desired.
