Ingredients:

  • 8 oz spaghetti or linguine
  • 2 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (optional)

Instructions:

  1. Cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then add them to the skillet, skin side down. Cook for about 4-5 minutes per side until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  5. Stir in the fresh spinach and cook until wilted.
  6. Add the cooked pasta to the skillet along with the lemon zest, lemon juice, and reserved pasta water. Toss everything together until well combined.
  7. Flake the cooked salmon into bite-sized pieces and gently fold it into the pasta mixture.
  8. Season with additional salt and pepper to taste. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
