Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken thighs with salt, pepper, oregano, and thyme.
  2. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sauté until translucent, about 4 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Stir in the rice, lemon zest, and lemon juice, mixing well to combine.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
  6. Return the chicken to the skillet, nestling it into the rice. Cover and let it warm through for another 5 minutes.
  7. Garnish with fresh parsley before serving.
