Ingredients:

  • 2 chicken breasts, diced
  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced chicken to the skillet and season with salt, pepper, oregano, and basil. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Add the cherry tomatoes, zucchini, and bell peppers to the skillet. Sauté for another 5 minutes until the vegetables are tender.
  5. Stir in the cooked pasta, lemon juice, and lemon zest. Mix well to combine and heat through for 2-3 minutes.
  6. Serve warm, garnished with fresh parsley and grated Parmesan cheese if desired.
