Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 head romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • Croutons for topping

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 30 minutes.
  4. Place the marinated chicken thighs on a baking sheet and roast in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  5. While the chicken is roasting, prepare the Caesar salad. In a large bowl, combine the chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese. Toss to combine.
  6. Once the chicken is done, remove it from the oven and let it rest for a few minutes.
  7. Serve the roasted chicken thighs alongside the Caesar salad, topped with croutons.
