Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups cauliflower rice
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • 1 cup chicken broth
  • 1 tablespoon butter

Instructions:

  1. In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and add the marinated chicken. Cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice golden color. Remove from skillet and let rest.
  3. In the same skillet, add the chicken broth and bring to a simmer. Stir in the cauliflower rice and cook for about 5 minutes until tender. Finish with butter and mix well.
