Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons (zested and juiced)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound fresh green beans, trimmed
  • 1 tablespoon unsalted butter
  • 1 tablespoon sliced almonds (optional)
  • Fresh parsley, for garnish

Instructions:

  1. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill or a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest.
  4. In a separate pan, melt the butter over medium heat. Add the trimmed green beans and sauté for about 5-7 minutes until they are tender but still crisp.
  5. If using, add the sliced almonds to the green beans during the last minute of cooking for added crunch.
  6. Slice the chicken and serve alongside the sautéed green beans. Garnish with fresh parsley and additional lemon wedges if desired.
