Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 2 large eggs
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
  2. Preheat the grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
  3. While the chicken is cooking, prepare the tomato sauce. In a small saucepan, combine the halved cherry tomatoes with a pinch of salt and cook over medium heat until they soften and release their juices, about 5 minutes.
  4. In a separate pot, bring water to a gentle simmer. Crack the eggs into separate bowls and gently slide them into the simmering water one at a time. Poach the eggs for about 3-4 minutes for a runny yolk.
  5. Once the chicken is cooked, slice it and arrange it on a plate. Spoon the warm tomato sauce over the chicken and top with poached eggs.
  6. Garnish with fresh parsley and an additional squeeze of lemon if desired. Serve immediately.
