Ingredients:

  • 2 chicken breasts
  • 2 medium zucchinis, spiralized
  • 1 cup cooked rice
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper to create a marinade.
