Ingredients:

  • 4 whitefish fillets (such as cod or haddock)
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the breadcrumbs, parsley, dill, lemon zest, salt, and pepper.
  3. Brush the whitefish fillets with olive oil on both sides. Coat the top side of each fillet with the breadcrumb mixture, pressing it down gently to adhere.
  4. Place the fillets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
  5. While the fish is baking, heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Drizzle with lemon juice and season with salt and pepper to taste.
  7. Serve the crusted whitefish on a plate with a generous portion of garlic spinach on the side.
