Ingredients:

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 150g rice noodles
  • 1 cup mixed salad greens
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red bell pepper, thinly sliced
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • Sesame seeds for garnish

Instructions:

  1. In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the rice noodles according to package instructions. Drain and rinse under cold water to cool.
  3. In a large bowl, mix the cooked noodles, salad greens, carrots, cucumber, and bell pepper.
  4. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey. Pour over the noodle salad and toss to combine.
  5. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
  6. Slice the grilled chicken and serve it on top of the noodle salad. Garnish with sesame seeds.
