Ingredients:

  • 8 oz pasta (spaghetti or linguine)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup asparagus, trimmed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. Preheat a grill or grill pan over medium-high heat. Toss the cherry tomatoes, zucchini, bell pepper, and asparagus with 2 tablespoons of olive oil, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from heat.
  4. In a large bowl, combine the cooked pasta, grilled vegetables, minced garlic, lemon zest, lemon juice, remaining olive oil, and dried oregano. Toss to combine well.
  5. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve warm, garnished with fresh basil leaves and grated Parmesan cheese if desired.
