Ingredients:

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the rinsed rice to the saucepan, stirring to coat the rice with the oil and cook for about 2-3 minutes until slightly toasted.
  4. Pour in the vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and fold in the chopped spinach and crumbled feta. Let it sit covered for an additional 5 minutes to allow the spinach to wilt.
  7. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
