Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 1 cup cauliflower rice
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup cheddar cheese, shredded
  • 2 tbsp Boursin cheese
  • 1 tbsp mayonnaise
  • 1 tsp mustard
  • 1 tbsp fresh mint, chopped
  • 1 tbsp Thai sauce
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine shrimp, olive oil, lemon juice, lime juice, Thai sauce, salt, and pepper. Marinate for 15-20 minutes.
  2. While the shrimp is marinating, cook the cauliflower rice in a skillet over medium heat for about 5-7 minutes until tender. Season with salt and pepper.
  3. In another skillet, cook the bacon until crispy, then remove and crumble it into small pieces.
  4. In the same skillet, add the marinated shrimp and cook for 3-4 minutes on each side until pink and cooked through.
  5. In a small bowl, mix Boursin cheese, mayonnaise, and mustard to create a creamy dressing.
  6. To assemble, place a generous serving of cauliflower rice in a bowl, top with shrimp, sprinkle with bacon and cheddar cheese, and drizzle with the creamy dressing. Garnish with fresh mint.
