Ingredients:

  • 1 cup turkey beans, cooked and mashed
  • 1/2 cup jello (lemon flavor)
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon zest
  • 1 teaspoon cracked black pepper
  • 1/2 teaspoon baking powder (gluten-free)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced bell peppers (for garnish)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine the mashed turkey beans, lemon jello, and mayonnaise until smooth.
  3. Add in the lemon zest, cracked black pepper, garlic powder, onion powder, and baking powder. Mix well.
  4. Fold in the chopped parsley gently until evenly distributed.
  5. Spoon the mixture into the prepared cupcake liners, filling each about 3/4 full.
