Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1 cup shiitake mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from skillet and set aside.
  4. In the same skillet, add the sliced onions and cook until translucent, about 3-4 minutes.
  5. Add the shiitake mushrooms to the skillet and sauté for another 5 minutes until they are tender.
  6. Return the chicken to the skillet, and squeeze the lime juice over the top. Stir to combine and heat through for an additional 2 minutes.
  7. Garnish with fresh cilantro if desired, and serve warm.
